Introduction to Yôkan, a traditionnal sweet

The impressive world of wagashi is studded with pastries as different as the moon and the sun. And those that shine the most are probably the Jônamagashi, these wagashi intended for the Tea Ceremony. As delicate as they are tasty, they delight the five senses.

The art of wagashi is at the crossroads of many other traditional Japanese disciplines. They influence the shapes and colors and even the name of the pastries. The simplest and oldest example is the yôkan, which will be prepared live to illustrate the words of Charlotte Caspar, a pastry chef specializing in wagashi.

And to broaden the spectrum of Jônamagashi, a demonstration of nerikiri shaping using traditional tools will also be displayed on the Washoku stage.
