After honing his skills in a number of gourmet restaurants, Yann Le Gall embarked on a career as an independent pastry chef. With 13 years' experience in the culinary field, he offers culinary services at home and at events, as well as made-to-order for private customers.
An avid fan of manga and animation, he instills Japanese culture into his creations in his own way, taking advantage of such popular products as matcha and yuzu, always respecting seasonality. His flagship creation, the Tiny [Cu]be, is a unique cubic innovation, a hybrid between a cream puff and an éclair.
On stage, Yann will show the public how to prepare Angel Cake, a soft, airy génoise cake, as well as matcha cream, a staple of the capital's most popular pastry shops.
