Japanese chef Seiichi Itô is an expert on kushikatsu. Kushi means skewer and katsu means pork - usually breaded and fried.
These little skewers of breaded and fried ingredients can be made with a variety of meats (chicken, pork, beef, shrimp, fish...) or vegetables (onions, asparagus, eggplant, mushrooms, pumpkin, sweet potatoes...), but pork and onions are the most common.
Seiichi Itô has transformed this popular dish into a gastronomic delicacy in his Parisian restaurant, Kushikatsu Bon.
